This is how the vegetarian lasagne looks like
- 500 g courgette
- Lasagne sheets (dried or fresh)
- 750 ml cooking cream or white lasagne sauce
- 250 g mozzarella cheese
- Margarine
- Vegan mortadella (if required)
- Olive oil
- Finely grate the courgette and mix it with salt, pepper and olive oil.
- Grease a lasagne dish with margarine and cover the base with a layer of cream or white lasagne sauce.
- Top with a layer of lasagne sheets and drizzle over some olive oil.
- Add a layer of courgette, (vegan mortadella), then mozzarella, grated parmesan cheese und spoon over the cream or white lasagne sauce.
- Start again with a layer of lasagne sheets, and then repeat the last steps until your dish is filled to the top.
- Cover the top with parmesan and mozzarella and add a bit of margarine so it gets nice and crispy.
- Bake for 40-50 min in the preheated oven at 200 °C until golden.
