Who doesn’t love eating food from different countries? Come with us on our culinary trip through Europe and discover new recipes. This month’s recipe is from Italy. Our colleague, Melinda, comes from Italy and shared her favourite recipe for a vegetarian courgette lasagne with us.
This recipe is not just great if you’re a courgette lover, but also for everyone who wants to eat less meat or enjoys a good vegetarian lasagne. You can also make this vegan - to keep in line with your diet or Veganuary challenge - by swapping ingredients with vegan versions. So get cooking and enjoy your homemade food!

This is how the vegetarian lasagne looks like

You’ll need the following ingredients:
  • 500 g courgette
  • Lasagne sheets (dried or fresh)
  • 750 ml cooking cream or white lasagne sauce
  • 250 g mozzarella cheese
  • Margarine
  • Vegan mortadella (if required)
  • Olive oil
  • Finely grate the courgette and mix it with salt, pepper and olive oil.
  • Grease a lasagne dish with margarine and cover the base with a layer of cream or white lasagne sauce.
  • Top with a layer of lasagne sheets and drizzle over some olive oil.
  • Add a layer of courgette, (vegan mortadella), then mozzarella, grated parmesan cheese und spoon over the cream or white lasagne sauce.
  • Start again with a layer of lasagne sheets, and then repeat the last steps until your dish is filled to the top.
  • Cover the top with parmesan and mozzarella and add a bit of margarine so it gets nice and crispy.
  • Bake for 40-50 min in the preheated oven at 200 °C until golden.
